Japanese Chicken Soup Recipe

Ingredients

1 daikon radish, cut into half rounds .
1 tbsp soy sauce (I use kikkoman lite) .
1/2 c miso (dissolved in some water) .
2 stalks green onions, finely sliced for garnish .
1 potato, cut into half rounds .
4-6 c reduced-sodium chicken broth .
1 carrot, cut bite size .
1/2 c boneless skinless chicken (cut to bite size pieces) .
10 oz firm tofu, cut into 1 inch cubes .
1 1/2 tbsps sesame oil .
1 celery, sliced thin at an angle .
1 onion, cut into chunks

Directions

Step #1 Stir fry chicken & vegetables in oil over med-heat/flame for a few mins.
Step #2 Add broth; bring to a boil, then lower heat to simmer.
Step #3 Add half of the miso mix.
Step #4 When vegetables are cooked, add in the remaining ingredients (except green onion).
Step #5 Garnish with green onion.
