Japanese Chicken Soup Recipe

Ingredients
  • 1 daikon radish, cut into half rounds .
  • 1 tbsp soy sauce (I use kikkoman lite) .
  • 1/2 c miso (dissolved in some water) .
  • 2 stalks green onions, finely sliced for garnish .
  • 1 potato, cut into half rounds .
  • 4-6 c reduced-sodium chicken broth .
  • 1 carrot, cut bite size .
  • 1/2 c boneless skinless chicken (cut to bite size pieces) .
  • 10 oz firm tofu, cut into 1 inch cubes .
  • 1 1/2 tbsps sesame oil .
  • 1 celery, sliced thin at an angle .
  • 1 onion, cut into chunks

Directions
  • Step #1 Stir fry chicken & vegetables in oil over med-heat/flame for a few mins.
  • Step #2 Add broth; bring to a boil, then lower heat to simmer.
  • Step #3 Add half of the miso mix.
  • Step #4 When vegetables are cooked, add in the remaining ingredients (except green onion).
  • Step #5 Garnish with green onion.
