Mad Dog’s Sweet-and-sour Stuffed Cabbage Recipe

Ingredients
  • 1/4 tsp ground black pepper .
  • 1/2 c grated yellow onions .
  • 1 (28 oz) can Italian-style crushed tomatoes .
  • 2 lbs cabbage (frozen & completely thawed for the day of use) .
  • 1 1/4 lbs ground chuck .
  • 1/4 c dried sour cherries .
  • 1 tsp kosher salt .
  • 3 garlic cloves (sliced) .
  • 1/2 c dry white wine .
  • 3 tbsps olive oil .
  • 2 tsps kosher salt .
  • 1/2 c raisins .
  • 1/2 lb ground turkey .
  • 3 tbsps lemon juice .
  • 1 medium carrot (grated) .
  • 3 tbsps long grain white rice (uncooked) .
  • 1/4 tsp ground black pepper .
  • 4 tbsps dark brown sugar .
  • 3 tbsps fresh thyme leaves, sliced or 1 tbsp dried thyme .
  • 1 large onion (sliced) .
  • 1/2 c fresh Italian parsley (sliced) .
  • 1/2 c fresh breadcrumbs

Directions
  • Step #1 1.
  • Step #2 In a 3 qt saucepan, heat the olive oil over med-heat/flame.
  • Step #3 2.
  • Step #4 Add the sliced onion & garlic & cook this until soft & golden brown (about 8 mins).
  • Step #5 3.
  • Step #6 Add the Thyme & carrot & cook for an extra 5 mins.
  • Step #7 4.
  • Step #8 Add the tomatoes, raisons, sugar, lemon juice, cherries salt & pepper & heat to a boil while stirring constantly.

  • Step #10 Lower the heat & let simmer for thirty mins.
  • Step #11 For Cabbage Rolls.

  • Step #13 While sauce simmers mix meats, rice, bread crumbs, grated onions, parsley, salt & pepper.

  • Step #15 Place one half of the completed sauce & wine In a large-ish covered oven-proof casserole dish.

  • Step #17 Take individual whole cabbage leaf & lay out on a cutting board.
  • Step #18 Place a medium-sized handful of meat mixture in the lower center of the leaf.
  • Step #19 Fold sides over the top of meat, roll towards the stem into a tight cylinder & place stem side down into the sauce.
  • Step #20 Continue with remaining cabbage leaves until meat is used up.
  • Step #21 4.
  • Step #22 Chop remaining cabbage & stir in theto remaining sauce.
  • Step #23 5.
  • Step #24 Spoon remaining sauce over cabbage rolls, place the covered casserole in a preheated 375º F oven & bake for 1 hr.
  • Step #25 6.
  • Step #26 Serve as soon as possible with mashed potatoes.
  • Step #27 * Stuffed cabbage rolls can be cooked up to 2 days ahead & cooled, uncovered, then chilled, covered.
  • Step #28 Reheat before serving.
  • Step #29 Can be frozen for up to 6 months in an airtight container.
  • Step #30 Thaw in refrigerator, heat & serve.
