Chocolate Streusel Pecan Muffins Recipe

Ingredients
  • 1/4 tsp ground cinnamon .
  • 1 3/4 c milk chocolate chips, divided .
  • 1/3 c milk .
  • 1/4 c all-purpose flour .
  • 1/4 tsp ground cinnamon .
  • 1 c all-purpose flour .
  • 1 large egg .
  • 3 tbsps butter .
  • 2 tsps baking powder .
  • 2 tbsps granulated sugar .
  • 1/4 c sliced pecans .
  • 3/4 c sliced pecans .
  • 1/2 tsp vanilla extract .
  • 2 tbsps butter, melted .
  • 1/4 c packed brown sugar

Directions
  • Step #1 FOR TOPPING:.
  • Step #2 COMBINE flour, brown sugar, cinnamon & 2 tbsps melted butter butter in small bowl with fork until mixture resembles coarse crumbs; stir in the pecans.
  • Step #3 FOR MUFFINS:.
  • Step #4 PREHEAT oven to 375° F; grease or paper-line 12 muffin c.
  • Step #5 COMBINE 1 c morsels, milk & 3 tbsps butter in a microwave safe bowl; microwave on full power for about 60 seconds & then stir until morsels are melted & mixture is smooth; if not fully melted, put back in for 10 second intervals.
  • Step #6 COMBINE flour, cinnamon, baking powder, sugar, pecans & remaining morsels in large bowl.
  • Step #7 COMBINE egg, vanilla extract & melted morsel mixture in small bowl; stir in theto flour mixture just until moistened.
  • Step #8 Spoon into prepared muffin c, filling 2/3 full then sprinkle with Topping.
  • Step #9 BAKE for 20 to 25 mins then cool in pan for 5 mins; remove to wire rack to cool completely.
