Mustard Tarragon Marinated Haddock Recipe

Ingredients
  • 3 tbsps olive oil .
  • 1/8 tsp pepper .
  • 1 tbsp grated onions .
  • 2 tbsps Dijon mustard .
  • 3 tbsps rice wine vinegar .
  • 1/2-1 tbsp sliced fresh tarragon leaves .
  • 1 1/2 lbs haddock fillets .
  • 3/4 tsp sugar .
  • paprika

Directions
  • Step #1 In a bowl, whisk the vinegar, mustard, sugar, oil, onion, tarragon & pepper.
  • Step #2 Rinse fish fillets & pat dry.
  • Step #3 Add the fish to the marinade & turn pieces to coat completely; let marinate about 1 hr in the refridgerator.
  • Step #4 After 1 hr, preheat your trusty oven to 450.
  • Step #5 Place fish fillets in a greased shallow baking pan & drizzle with any remaining marinade.
  • Step #6 Sprinkle top w/ paprika.
  • Step #7 Bake, uncovered, in a 450 degree F.
  • Step #8 oven until fish flakes & flesh is opaque;.
  • Step #9 about 7-9 mins.
