Potato-tarragon Gratin Recipe

Ingredients
  • 2 1/2 lbs russet potatoes, 1/4-inch slices .
  • 2 tbsps fresh tarragon, finely sliced .
  • 1/4 tsp ground nutmeg .
  • 2 tbsps fresh parsley, minced .
  • 2 c whipping cream .
  • 1 c whole milk, do not use lowfat

Directions
  • Step #1 Preheat oven to 375ºF.
  • Step #2 Butter 8x8x2-inch glass baking dish.
  • Step #3 Combine potatoes, cream, milk, tarragon & nutmeg in heavy large saucepan.
  • Step #4 Spice up generously with salt & pepper.
  • Step #5 Bring to boil over med-heat/flame.
  • Step #6 Reduce heat; simmer 4 mins.
  • Step #7 Using slotted spoon, transfer potatoes to prepared dish.
  • Step #8 Pour cream mixture over.
  • Step #9 Bake until top is golden brown, potatoes are tender & cream mixture thickens, about 1 hr.
  • Step #10 Let stand 10 mins.
  • Step #11 Sprinkle top with parsley & serve.
