Blueberry Bagels Recipe

Ingredients
  • 1 egg white .
  • 1/2 oz salt .
  • 1 1/2 c water .
  • 1 1/2 oz sugar .
  • 2 quarts water .
  • 2 (1/4 oz) packages yeast .
  • 3 1/2 c whole wheat flour .
  • 1/2 c dried blueberries, finely sliced

Directions
  • Step #1 Mix yeast, sugar & warm water together & let this stand 3 mins.
  • Step #2 Mix 2 c of flour with the salt In a large-ish bowl & add the yeast mixture.
  • Step #3 Stir until mixd & slowly mix in the rest of the flour & blueberries.
  • Step #4 Knead on a floured surface for 5 mins, adding extra flour if needed, dough should be firm.
  • Step #5 Place dough in a greased bowl, cover & let rise until double.
  • Step #6 After rising punch down & divide dough into 12 balls.
  • Step #7 Allow to rest for 4 mins.
  • Step #8 Bring 2 quarts of water to boil.
  • Step #9 With your thumb, make a hole in each ball of dough & pull open about 2 inches, making a bagel shape.
  • Step #10 Preheat oven to 350 degrees.
  • Step #11 Place the shaped dough onto a cookie sheet & cover for 10 mins.
  • Step #12 Lower heat under water for it to be simmering.
  • Step #13 Drop 2 or 3 bagels at a time into the water for about 45 seconds, turning each once.
  • Step #14 Drain & place on greased baking sheets.
  • Step #15 Brush tops with beaten egg white.
  • Step #16 Bake for 35 mins, turning once for even browning.
  • Step #17 Bagels are done when they are golden brown & shiny.
