Never-fail Blueberry Buckle Recipe

Ingredients
  • 1/2 tsp cinnamon .
  • 3 tbsps butter .
  • 1/4 c butter .
  • 1 c blueberries .
  • 2 c all-purpose flour .
  • 1/4 c sugar .
  • 1 large egg .
  • 1/2 tsp salt .
  • 3/4 c sugar .
  • Cake ingredients .
  • 2 tsps baking powder .
  • 1/2 c milk .
  • 1/3 c sifted all-purpose flour

Directions
  • Step #1 Preheat the oven to 375°F Grease an 8-inch springform pan.
  • Step #2 Set aside.
  • Step #3 Sift together the 2 c of flour, the baking powder & the salt.
  • Step #4 Set aside.
  • Step #5 Cream the butter & sugar until fluffy, about 3 mins.
  • Step #6 Beat in the egg.
  • Step #7 Add the flour mixture in 3 parts, alternating with the milk.
  • Step #8 Toss the berries with the remaining 1 to 2 tbsps of flour (to separate & scatter evenly throughout the batter) & fold inches Pour batter into the prepared pan.
  • Step #9 Set aside.
  • Step #10 Combine ingredients for topping with a fork to make crumbly mixture.
  • Step #11 Sprinkle top this over the batter.
  • Step #12 Bake for one hr, then test for doneness by carefully inserting a fork.
  • Step #13 If it does not come out clean, give the cake another 5 to 10 mins to bake.
  • Step #14 When the cake has cooled, run a knife around the edges & lift the cake out o the pan.
  • Step #15 Serve with whipped cream.
