Goanese Pork Vindaloo Recipe

Ingredients
  • 2 large onions, finely sliced .
  • 2 tsps mustard powder .
  • 2 tsps ground cumin .
  • 2 tsps turmeric .
  • 1 tsp cinnamon, ground .
  • 3 tbsps vinegar .
  • 5 garlic cloves, sliced .
  • 1 tsp cardamom, ground .
  • 1/2 tsp chili powder .
  • 4 tbsps oil .
  • 1 large onion, sliced .
  • 2 inches fresh ginger, grated .
  • 2 lbs pork, cubed

Directions
  • Step #1 Put onions, garlic & all of the spices into a bowl, using some of the vinegar make a paste.
  • Step #2 Divide the paste into two.
  • Step #3 To one half of the paste add the remaining vinegar.
  • Step #4 Cover up the meat with this mixture & leave to marinate over night.
  • Step #5 Heat the oil & fry the sliced onions with the ginger & the second spice mix until onions are soft & brown.
  • Step #6 Add the meat mixture & a little water, simmer till meat is tender, adding water if the dish becomes too dry.
