Chicago-style Steak With Bleu Cheese Butter Recipe

Ingredients
  • Marinade .
  • cooking sherry .
  • 4 sirloin steaks .
  • soy sauce .
  • 2-3 green onions, finely sliced (tops included) .
  • 2 tbsps blue cheese, crumbled .
  • 2 tbsps butter, softened .
  • Butter .
  • worcestershire sauce .
  • red wine vinegar

Directions
  • Step #1 Lay steak portions in a marinating container or a zippered plastic bag.
  • Step #2 Splash several dashes of the marinade into the bag; zip the bag shut & smoush the bag to spread the marinade around.
  • Step #3 Allow steaks to marinate for at least 30 mins (longer is even better).
  • Step #4 At the end of the marinating time: either grill the meat or brown In a large-ish HOT frying pan with 2 T.
  • Step #5 butter or oil.
  • Step #6 Cook uncovered for four to five mins; drizzle marinade over meat, flip meat over; continue cooking for another three to four mins.
  • Step #7 Meanwhile, in a small bowl, mix the butter, cheese & onion; set aside.
  • Step #8 When meat has attained perfection, swirl the pan juices around, remove the meat to a serving platter; drizzle pan juices over the meat.
  • Step #9 Spoon one-fourth of the bleu-butter over each portion; serve as soon as possible.
