1 1/2 c fresh pineapple, cut into 1 1/2 inch pieces
Directions
Step #1 Combine juice,brown sugar,and crushed red pepper in small bowl;set aside.
Step #2 Thread cod, red pepper, pineapple, & onion evenly onto six -8 inch skewers (if wooden soak in water first for 1/2 hr)and place this in shallow baking dish.
Step #3 Drizzle with lime juice mixture.
Step #4 Cover up & chill for 30 mins.
Step #5 Coat grill rack with non-stick cooking spray.
Step #6 Preheat grill to medium-high direct heat.
Step #7 Grill skewers,covered with grill lid, 5-7 mins per side,turning every once in awhile, or until fish flakes with fork.
