Ingredients
1 pinch salt .
1 c toasted pecans, coarsely sliced .
1 tsp vanilla extract .
3/4 c sour cream .
1 tbsp milk .
1 tsp vanilla extract .
1 lb about 4 1/3 c confectioners' sugar, sifted .
8 tbsps unsalted butter, cut up .
1/3 c unsweetened cocoa powder (not Dutch process) .
2 c granulated sugar .
2 c flour .
2 large eggs .
8 tbsps unsalted butter, cut up .
8 tbsps margarine, cut up .
1 c water .
1 tsp baking soda .
Frosting .
1/3 c milk, plus .
1/4 c unsweetened cocoa powder (not Dutch process)
Directions
Step #1 To make the cake, position a rack in the center of the oven & preheat to 350 degrees.
Step #2 Lightly butter & flour a 13x9-inch baking pan, tapping out the excess flour.
Step #3 Whisk the flour, granulated sugar, baking soda & salt In a large-ish bowl to mix.
Step #4 In medium saucepan, water & cocoa to boil over high heat, bring the butter, margarine, stirring to dissolve the butter & margarine.
Step #5 Pour into flour mixture & whisk well.
Step #6 Add the sour cream, then the eggs & vanilla, & beat well.
Step #7 Spread evenly in the pan.
Step #8 Bake until the cake springs back when pressed in the center, about 35 mins.
Step #9 Remove from the oven & place on a wire rack.
Step #10 To make frosting, milk & cocoa to a boil In a large-ish saucepan over med-heat/flame, bring the butter, stirring to dissolve the butter.
Step #11 Gradually stir in the the confectioners' sugar, then the vanilla.
Step #12 Stir in the sliced pecans.
Step #13 Pour over the warm cake.
Step #14 Cool the cake in the pan on the rack.
Step #15 Cut into pieces & serve directly from pan.
