Tex-mex Sheet Cake Recipe

Ingredients
  • 1 c butter, at about room temp .
  • 1/2 c sour cream, (1/2 c butter milk may be substituted) .
  • For the Frosting .
  • 2 eggs .
  • 1 c butter .
  • 6 tbsps canned milk, (sour cream may be substituted, makes a richer frosting) .
  • 1/2 tsp salt .
  • 1 tsp baking soda .
  • 9 tbsps baking cocoa .
  • 2 tbsps baking cocoa .
  • 2 tsps cinnamon, for the Tex-Mex version .
  • For the Cake .
  • 1 1/2 tsps cinnamon, for the Tex-Mex version .
  • 2 c flour .
  • 2 1/2 c powdered sugar .
  • 2 c sugar .
  • 1 c water

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 In a medium sauce pan, bring the c of butter, over med-heat/flame, 2 Tbls.
  • Step #3 baking cocoa & the water to a boil.
  • Step #4 Remove from heat & pour this into a large, heat-proof bowl.
  • Step #5 Using an electric mixer, salt & cinnamon & last, slowly mix in the sugar, the flour.
  • Step #6 (If you mix in the flour first, it can do really funny things in the hot mixture!).
  • Step #7 Add the eggs, 1/2 c sour cream & baking soda & mix just until nice & smooth.
  • Step #8 Pour batter into a greased or sprayed jelly-roll pan & bake for 30 mins, or until sides of cake have pulled away from the pan.
  • Step #9 Remove cake from oven & spread frosting on the cake while it's still hot.
  • Step #10 For the frosting, with an electric mixer, mix all frosting ingredients & whip together until smooth.
  • Step #11 The frosting will sort of liquify when it is spread on the hot cake, so if it seems a bit stiff, that's probably OK.
