Chicken And Bean Soft Tacos Recipe

Ingredients
  • 1 tsp minced garlic .
  • 1/4-1/2 tsp red pepper flakes .
  • guacamole .
  • salsa .
  • 4-8 oz tomato sauce (optional) .
  • flour tortillas .
  • 1/2 c water .
  • Toppings (any of your favorites) .
  • 1-2 tbsp olive oil .
  • 1/2 c sliced onions .
  • 1/2 tsp oregano .
  • 1-2 tbsp chili powder .
  • 1/2 c black olives (sliced or sliced) .
  • shredded cheese .
  • salt (to taste) .
  • 1 (16 oz) can black beans, undrained (or kidney beans, or pinto beans) .
  • 1 jalapeno pepper, sliced (a 4 oz can of sliced mild chiles will work also) .
  • 1-2 tsp cumin .
  • 2 boneless skinless chicken breasts, cooked (sliced or shredded) .
  • 1 c corn .
  • sour cream

Directions
  • Step #1 saute onion in large pan till translucent.
  • Step #2 Add garlic & sliced jalapeno, saute briefly, stirring.
  • Step #3 (Sometimes if I don't have cooked chicken on hand, I cut raw chicken in strips & saute it along with the onions.
  • Step #4 ).
  • Step #5 Add chicken, seasonings & remaining ingredients (except tortillas & toppings).
  • Step #6 Cook over medium high heat, till ingredients are mixd & liquid cooks down - about 5-10 mins.
  • Step #7 This timing of the cooking is flexible, depending on how much seasoning you add, if you add tomato sauce, how much liquid is in your beans, etc.
  • Step #8 I make it spicy & just wet enough that it's not dried out, but not watery or gloppy.
  • Step #9 Adjust seasonings, salt to taste.
  • Step #10 (For me, it's often at this point when I decide if I want to add the taste of tomato sauce.
  • Step #11 ).
  • Step #12 Serve in flour tortillas with your favorite toppings.
