Eggplant (aubergine) Casserole Recipe

Ingredients
  • 1 1/2 c cheddar cheese, shredded .
  • salt & pepper .
  • 2 eggs, beaten .
  • 1 onion, sliced .
  • 2 eggplants, medium size

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Peel eggplant & cut into large chunks.
  • Step #3 Boil in salted water for about 10 mins or until soft.
  • Step #4 Drain eggplant in collander, then return to pot & mash.
  • Step #5 Add all other ingredients except 1/2 c of the cheese.
  • Step #6 Spray a casserole dish with cooking spray & pour eggplant mixture into dish.
  • Step #7 Sprinkle top remaining cheese on top.
  • Step #8 Bake for 45 mins.
