Greek Cranberry Salad Recipe

Ingredients
  • 3/4 c dried cranberries .
  • 1/4 c sugar (for the nuts) .
  • 1 c coursely sliced pecans .
  • 1/2 tsp dried oregano .
  • 1/4 c red wine vinegar .
  • 1/2 c loosely packed parsley sprigs .
  • 5 oz salad greens, Spring Mix is good .
  • 1/4 c thinly sliced red onions .
  • 1/2 tsp salt .
  • 1/4 c vegetable oil .
  • 4 oz crumbled feta cheese .
  • 2 dashes garlic powder .
  • 1 tbsp sugar (for the dressing) .
  • 1/8 tsp pepper .
  • 3 tbsps butter

Directions
  • Step #1 Make the sugared nuts.
  • Step #2 In a skillet, cook & stir the pecans in the butter until toasted - about 5 mins.
  • Step #3 Remove from the heat & stir in the 1/4 c of sugar.
  • Step #4 Set aside to cool.
  • Step #5 Prepare the dressing.
  • Step #6 Pour the red wine vinegar, parsley, oregano, vegetable oil, garlic powder, 1 T of sugar, salt & pepper into a mixer.
  • Step #7 Blend well until the ingredients are mixd & the parsely is well processed.
  • Step #8 Toss the greens, sugared nuts, cranberries, onions, & cheese with the dressing.
  • Step #9 The dressing is pretty powerful, so use sparingly & adjust to taste.
  • Step #10 I found the proportions as listed to be just about right for our taste, but you may prefer less dressing.
  • Step #11 Serve as soon as possible.
