Double Coconut Pancakes Recipe

Ingredients
  • 1 (13 1/2 oz) can light coconut milk .
  • 1 tbsp butter, melted .
  • 2 tbsps sugar .
  • 2 tbsps sweetened flaked coconut .
  • 1 1/2 c flour .
  • 1/2 tsp salt .
  • 1 egg, lightly beaten .
  • 1 tsp baking powder

Directions
  • Step #1 Combine flour & next 4 ingredients (through salt) In a large-ish bowl.
  • Step #2 Combine coconut milk, butter, & egg; stir well.
  • Step #3 Add coconut milk mixture to flour mixture, stirring until smooth.
  • Step #4 Pour about 1/4 c batter per pancake onto a hot nonstick griddle or nonstick skillet.
  • Step #5 Cook 3 mins or until tops are covered with bubbles & edges look cooked.
  • Step #6 Carefully turn pancakes over; cook 2 mins or until bottoms are lightly browned.
