Cranberry Tea Bread Recipe

Ingredients
  • 1 c rolled oats .
  • 2 tsps baking powder .
  • 2 large eggs .
  • 1 c all-purpose flour, plus more .
  • 1/2 tsp baking soda .
  • 1/4 tsp salt .
  • 3/4 c plain low-fat yogurt .
  • 1/2 tsp ground cardamom .
  • 1/2 c sugar .
  • 1/4 c canola oil, plus more .
  • all-purpose flour, for pan (spooned & leveled) .
  • 1/4 c crystallized ginger, coarsely sliced .
  • 1 c fresh cranberries or frozen cranberries .
  • canola oil, for pan

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Lightly oil & flour an 8 1/2-by-4 1/2-inch loaf pan.
  • Step #3 Spread oats on a rimmed baking sheet & toast until golden brown & fragrant, about 10 mins.
  • Step #4 Transfer to a food processor/blender & pulse until finely ground.
  • Step #5 Place In a large-ish bowl; stir in the flour, baking soda, salt, baking powder, sugar, & cardamom.
  • Step #6 In a separate bowl, oil, stir this together yogurt, & eggs; whisk until mixd.
  • Step #7 Make a well in the center of the dry ingredients & pour in the liquid ingredients; stir until just mixd.
  • Step #8 Fold in cranberries & ginger.
  • Step #9 Spoon mixture into the prepared pan & smooth top this with a rubber spatula.
  • Step #10 Bake until a toothpick inserted in center of the loaf comes out just clean, about 50 mins.
  • Step #11 Check the loaf after 30 mins & tent with aluminum foil wrap if browning too quickly.
  • Step #12 Cool 10 mins in the pan, & then run a metal spatula around edges & invert loaf onto a rack.
  • Step #13 Turn right side up to cool completely before slicing.
