Bounty Boudin Blanc Recipe

Ingredients
  • 6 lbs fresh ground lean pork .
  • 12 celery ribs .
  • hog casings .
  • 2 lbs fresh fatty ground pork .
  • 3 bell peppers .
  • 6 garlic cloves .
  • 6 tbsps salt .
  • 16 c cooked rice (boiled) .
  • 5 tbsps fresh ground black pepper .
  • 3 tbsps red peppers .
  • 2 lbs pork liver, ground .
  • 3 tbsps Accent seasoning .
  • 2 c green onion tops, sliced .
  • 6 onions

Directions
  • Step #1 Place ground meats in large pot & cover with water.
  • Step #2 Bring to boil & cover.
  • Step #3 Simmer for 3 to 4 hrs or until well cooked.
  • Step #4 Pour off excess liquid & save.
  • Step #5 Grind onions, peppers, celery & garlic using grinder or mixer.
  • Step #6 Mix meat & veggies then add your rice.
  • Step #7 Use 1 large bowl or 2 small bowls.
  • Step #8 Combine the accent, salt, pepper & mix well.
  • Step #9 Then add to other ingedients & mix well.
  • Step #10 sample at random to make sure seasoning is uniform.
  • Step #11 If it is too dry ass some of the meat liquid.
  • Step #12 Fill casings using sausage stuffer or a meat grinder attachment.
  • Step #13 Twist casing every 6 to 10 inches.
  • Step #14 Flip to right then to left.
  • Step #15 This makes your links.
  • Step #16 Tie the ends To heat place this in boiling water for 30 mins or microwave for 15-30 seconds.
  • Step #17 Freezes.

  • Step #20 Note: The rice: meat is a 2:1 ratio.
