Ingredients
10 oz cream of mushroom soup .
1/2 large onion, sliced .
1/2 c sharp cheddar cheese, shredded .
14 oz canned artichoke hearts, drained, but not rinsed .
1 tbsp chicken bouillon granules, mashed or 2 chicken bouillon cubes, mashed .
2 tbsps all-purpose flour .
1/2 c 2% low-fat milk .
10 oz cream of chicken soup .
1 tbsp olive oil .
4 c white rice, cooked .
1 tsp seasoning salt .
3 boneless skinless chicken breasts .
1 tbsp butter .
1/2 c fresh parsley, sliced .
1 1/2 tsps kosher salt .
cooking spray .
1/2 c mozzarella cheese, shredded
Directions
Step #1 In a small pan, melt the butter, add the olive oil & sautee the parsley & onion until tender.
Step #2 Set aside.
Step #3 Preheat the oven to 325-degrees F.
Step #4 In a four-quart cooking pot, fill 2/3 full with hot water & bring to a boil.
Step #5 Stir in the bouillon & kosher salt, then add the chicken breasts.
Step #6 Reduce heat to a low boil, covered, for 30 mins.
Step #7 At the end of 30 mins, remove chicken breasts & chop them into 3/4 inch chunks, trimming off any small pieces of fat or gristle as necessary.
Step #8 In a large mixing bowl, seasoning salt, mix together the two soups, & the sauteed onions/parsley (no need to drain).
Step #9 Mix the flour into the milk until lumps are gone & add it to the mix.
Step #10 Spray a large casserole dish with the cooking spray.
Step #11 Spoon in 1/3 of the soup mix.
Step #12 Next, spoon in the rice & lay the chicken pieces evenly on top of it.
Step #13 Roughly chop the artichoke hearts & add them to the remaining soup mix.
Step #14 Spoon this mix onto the chicken & rice.
Step #15 Mix together the two cheeses & top the casserole with it.
Step #16 Bake at 325-degrees F.
Step #17 for 30 mins, covered.
Step #18 Then, uncover the casserole & BROIL on high (middle rack of oven) for about 8 mins.
Step #19 Keep an eye on it so that it does not burn.
Step #20 You want just a few brown spots on the top.
Step #21 Remove casserole from oven & allow this to cool for 20 mins prior to serving.
Step #22 NOTE: I use 3 of the frozen-type chicken breasts, which are actually breast HALVES.
Step #23 (I put them into the boiling water while still frozen.
Step #24 ) Also, I use one c of dry Basmati rice (cooked in 2 3/4 c of water, with 1 tbsp of butter & a tsp of salt) to generate my four c of rice.
