Ingredients
1/2 c creamy light caesar salad dressing .
1/2 lb boneless skinless chicken breast halves (about 2) .
1 tbsp baking powder .
CAESAR SALAD .
salt, sprinkle .
2 c finely sliced romaine lettuce .
FOR THE TOPPING .
3 tbsps grated parmesan cheese .
3/4 c grated part-skim mozzarella cheese .
1 tbsp cooking oil .
BISCUIT PIZZA CRUST .
1/4 tsp salt .
1/4 c creamy light caesar salad dressing .
pepper, sprinkle .
1 tsp cooking oil .
2 c all-purpose flour .
2/3 c water
Directions
Step #1 FOR THE BISCUIT PIZZA CRUST: Stir flour, baking powder & salt together in medium bowl.
Step #2 Add water & cooking oil.
Step #3 Stir to form soft ball.
Step #4 Knead on lightly floured surface 8 to 10 times.
Step #5 Roll out & press in greased 12 inch pizza pan, forming rim around edge.
Step #6 NOTE: You can use this crust to make a thin biscuit pizza crust: Reduce flour to 1 1/2 c.
Step #7 Reduce water to 1/2 c.
Step #8 Crust will cook a bit quicker.
Step #9 Wheat Biscuit Pizza Crust: Use whole wheat flour for half of all purpose flour called for.
Step #10 FOR THE TOPPING: Prepare pizza dough.
Step #11 Roll out & press in greased 12 inch pizza pan, forming rim around edge.
Step #12 Place cooking oil & chicken in medium non stick frying pan.
Step #13 Sprinkle top with salt & pepper.
Step #14 Saute for about 5 mins until chicken is cooked.
Step #15 Spread first amount of Caesar dressing over crust.
Step #16 Sprinkle top mozzarella cheese over dressing.
Step #17 Scatter chicken over top.
Step #18 Bake on bottom rack in 425°F oven for 13 to 15 mins, or for 8 mins if using partially baked crust.
Step #19 Take pizza out of oven & spoon on Caesar salad.
Step #20 Toss lettuce with second amount of Caesar dressing in large bowl.
Step #21 Spoon over top.
Step #22 Sprinkle top with Parmesan cheese.
Step #23 Serve hot.
Step #24 Cuts into 8 wedges.
