Strawberry Coffee Cake Recipe

Ingredients
  • 3/4 c sugar .
  • 1/4 tsp almond extract .
  • 1/4 tsp ground cinnamon .
  • 3/4 c cold butter .
  • 1 (10 oz) package frozen strawberries (sweetened, sliced & thawed) .
  • 1/2 tsp baking soda .
  • 2 1/3 c all-purpose flour .
  • 1/8 tsp salt .
  • 1 egg, lightly beaten .
  • 1/2 tsp baking powder .
  • 3/4 c buttermilk .
  • 1 tbsp cornstarch

Directions
  • Step #1 In large saucepan, mix cornstarch & strawberries until mixed.
  • Step #2 Bring to a boil over med-heat/flame, stirring constantly.
  • Step #3 Cook & stir for 2 mins or until thickened.
  • Step #4 Remove from the heat; stir in the cinnamon & almond extract, set aside.
  • Step #5 In large bowl, mix flour & sugar.
  • Step #6 Cut in butter until mixture is crumbly.
  • Step #7 Set aside 1/2 c for topping.
  • Step #8 Add baking powder, baking soda & salt to the remaining flour mixture.
  • Step #9 Stir in buttermilk & egg until moistened.
  • Step #10 Spread 1 1/2 c of batter into a greased 8-inch square baking dish.
  • Step #11 Carefully spread with the strawberry mixture.
  • Step #12 Drop remaining batter by tbspfuls over strawberry mixture.
  • Step #13 Sprinkle top with reserved crumb mixture.
  • Step #14 Bake at 350 degrees for 35-40 mins or until golden brown.
  • Step #15 Cool on a wire rack.
