Stir-fried Ginger Chicken Recipe

Ingredients
  • 1 bunch broccoli, separated into flowerets & sliced stems .
  • 1/3 c soy sauce .
  • 1 tsp sesame oil .
  • 2 garlic cloves .
  • 1/3 c cold water .
  • 2 c chicken stock .
  • 1 tbsp vegetable oil .
  • 4 whole boneless skinless chicken breasts .
  • 1/3 c dry sherry .
  • 1 tbsp cornstarch .
  • 2 c snow peas .
  • 2 inches fresh ginger (peeled & grated)

Directions
  • Step #1 Cut the chicken into 1 inch strips & stir-fry it in the oil over high heat for about 2 mins, until it has browned & is barely cooked through.
  • Step #2 Drain the chicken & set it aside.
  • Step #3 Steam the broccoli flowerets & the sliced stems for 3 mins, & the snow peas for 1 min.
  • Step #4 Set them aside.
  • Step #5 Boil the chicken stock, ginger, & garlic for 5 mins & then strain the stock.
  • Step #6 Combine the cornstarch with the cold water.
  • Step #7 Stir it into the chicken stock & boil the mixture until it has thickened.
  • Step #8 Add the soy sauce, sherry, & sesame oil.
  • Step #9 Add the chicken & vegetables to the sauce & heat through.
  • Step #10 Serve with boiled or steamed rice.
