Fried Rice - Oamc Recipe

Ingredients
  • 1/2 c carrots, Chopped .
  • Serving Day .
  • 1/3 c bell peppers, Chopped .
  • 4 eggs .
  • 2 tbsps soy sauce .
  • pepper, to taste .
  • 1/4 small onion, Chopped .
  • Freezing Day .
  • 4 c cooked rice, Cooled .
  • 1/2 c frozen peas .
  • 2 tbsps olive oil

Directions
  • Step #1 --- Freezing Day ---.
  • Step #2 In a large bowl, rice, mix the peas & carrots, onion & parsley flakes.
  • Step #3 Mix well.
  • Step #4 Pour into 2 quart size freezer bags.
  • Step #5 Seal, lable & freeze.
  • Step #6 --- Serving Day ---.
  • Step #7 Thaw bag of rice mixture overnight in fridge or run warm water over bag.
  • Step #8 Heat 2 Tsp oil In a large-ish skillet.
  • Step #9 Dump rice mixture into the skillet.
  • Step #10 Cook & stir over med-heat/flame, breaking up any chunks of rice, until hot, about 5 mins.
  • Step #11 Push rice mixture to the side of the skillet.
  • Step #12 Add 1 tsp oil to the empty side of the skillet & add the eggs.
  • Step #13 Cook & stir until eggs are thickened but still moist.
  • Step #14 Mix rice in with egg breaking up egg into bite size pieces.
  • Step #15 Turn off heat.
  • Step #16 Stir in soy sauce & pepper.
