Cheesy Potato Soup Recipe

Ingredients
  • 1 medium onion, sliced .
  • 2 c milk .
  • 1/8 tsp pepper .
  • minced fresh parsley .
  • 6 medium potatoes, cubed (the potatoes are the base, so if they are smaller potatoes, use more) .
  • 1 (10 3/4 oz) can condensed cream of chicken soup .
  • 6 oz monterey jack cheese, cubed .
  • 1/2 tsp garlic salt .
  • 6 oz cheddar cheese, cubed .
  • 1/8 tsp onion powder .
  • 2 tbsps butter or margarine .
  • 5 c water

Directions
  • Step #1 In a large saucepan or soup kettle, saute onion in butter.
  • Step #2 Add potatoes & water.
  • Step #3 Bring to a boil.
  • Step #4 Reduce heat; simmer for 15 mins or until potatoes are tender.
  • Step #5 Turn heat up to medium.
  • Step #6 Stir in the milk, onion powder, soup, garlic salt, & pepper; heat through.
  • Step #7 Add cheese; Stir until cheese is melted.
  • Step #8 Garnish with parsley.
