Breakfast Casserole Recipe

Ingredients
  • 1/4 c butter .
  • 4 oz mushrooms, sliced .
  • 1 1/2 slices bread, crusts removed & bread torn into pieces .
  • 1/4 c fresh parsley leaves .
  • 1/3 c water .
  • 4 green onions, cut into 1-inch pieces .
  • 12 eggs .
  • 1/4 c fresh cilantro leaves .
  • 1 tsp salt .
  • 10 oz muenster cheese, cut into 1-inch cubes (or use your favorite cheese) .
  • pepper .
  • 1 c milk

Directions
  • Step #1 Preheat oven to 400-degrees F.
  • Step #2 Butter a 6-c baking dish & set aside.
  • Step #3 In a food processor/blender process bread to make crumbs & then transfer crumbs to a small bowl.
  • Step #4 Add milk to crumbs in bowl & let soak for 5 mins.
  • Step #5 Chop green onions in food processor/blender or by hand.
  • Step #6 In a skillet over medium high heat melt butter & add green onions & mushrooms, cooking until soft (5 mins).
  • Step #7 Set aside but leave mixture in skillet.
  • Step #8 Using a food processor/blender chop cheese with cilantro & parsley & then transfer to a second small bowl.
  • Step #9 In a large bowl mix eggs, bread crumb mixture, salt & pepper & then stir in the water.
  • Step #10 Return skillet (with green onion mixture) to stove over med-heat/flame.
  • Step #11 Add egg mixture to skillet, stirring until soft but not set (5 mins).
  • Step #12 Spread half of the egg mixture into prepared dish, sprinkling with half of the cheese mixture.
  • Step #13 Repeat with remaining egg mixture & cheese.
  • Step #14 ***Can be put in the fridged at this point covered & put in the fridged for up to 12 hrs.
  • Step #15 Bring to about room temp before proceeding***.
  • Step #16 Bake in preheated oven for 18-20 mins or until light brown & puffy.
