Vegetable Beef Soup Recipe

Ingredients
  • 2 bay leaves .
  • salt, to taste .
  • 1 (28 oz) can sliced tomatoes .
  • 1-2 tbsp butter .
  • 2-3 medium potatoes, sliced (optional) or 1/4 c elbow macaroni (optional) .
  • 1 (16 oz) bag mixed vegetables .
  • 1 (46 oz) bottle vegetable juice, such as V8 .
  • 1-1 1/2 lb stewing beef .
  • pepper, to taste .
  • 1/2 medium onion, sliced .
  • garlic powder, sugar or Splenda sugar substitute .
  • 1-2 tbsp flour .
  • 1-2 tbsp oil, plus .
  • 1-2 tsp Italian spices .
  • 8 oz baby butter beans .
  • 1 c water

Directions
  • Step #1 In a dutch oven or large pot brown you onions & stew beef in the oil & butter.
  • Step #2 Sprinkle top the flour over the beef & cook a few mins.
  • Step #3 The flour will help thicken the soup.
  • Step #4 Add remaining ingredients.
  • Step #5 Stir well, scraping up any yummy brown bits from the bottom of the pot.
  • Step #6 Bring all to a boil, then turn down on low & let simmer for hrs.
  • Step #7 Check it often to make sure it is not sticking or burning.
  • Step #8 You will need to taste & season how you like it.
  • Step #9 Everyone is different.
  • Step #10 I do add a sprinkling of sugar or splenda to help with the acidity.
  • Step #11 If you decided to add potatoes, add them along with everything else.
  • Step #12 If macaroni, add in before eating allowing time for them to cook, but not be mushy.
