Chocolate Covered Caramel Surprise Cookies Recipe

Ingredients
  • 2 1/2 c all-purpose flour
  • 1 tbsp white sugar
  • 48 chocolate covered caramel candies
  • 1 c sliced pecans
  • 1 c butter, softened
  • 2 eggs
  • 2 tsps vanilla extract
  • 1 c packed brown sugar
  • 1 c white chocolate chips
  • 1 tsp baking soda
  • 3/4 c unsweetened cocoa powder
  • 1 c white sugar

Directions
  • Step #1 In a large bowl, brown sugar, cream together the white sugar, & butter until light & fluffy.
  • Step #2 Beat in the eggs, one at a time, then stir in the the vanilla.
  • Step #3 Combine the flour, & baking soda, cocoa, slowly stir in theto the creamed mixture.
  • Step #4 Fold in the pecans.
  • Step #5 Cover dough & chill for at least one hr.
  • Step #6 Meanwhile unwrap the candies.
  • Step #7 Preheat the oven to 350 degrees F (175 degrees C).
  • Step #8 With floured hands, wrap about 1 tbsp of dough around each piece of candy, completely covering the candy.
  • Step #9 Roll each ball in the remaining tbsp of white sugar.
  • Step #10 Place 2 inches apart on an unprepared cookie sheet.
  • Step #11 Bake for 7 to 10 mins in the preheated oven.
  • Step #12 Cookies should be set & slightly cracked.
  • Step #13 Melt the white chocolate chips in the microwave oven, or in a bowl over simmering water.
  • Step #14 Drizzle over the cookies when they are cool.
  • Step #15 If the melted chips are too thick, add vegetable oil to achieve the desired consistency.
