Ingredients
2 tsps celery seeds .
Turkey .
1/4 c soy sauce or tamari .
2 tsps thyme .
2 tsps marjoram .
salt & pepper .
1 large onion, sliced fine .
1 1/3 c celery, sliced (about 4 stalks) .
5 lbs firm tofu .
3-4 garlic cloves, minced .
2 tbsps miso .
2 tbsps orange juice .
1 c mushrooms, finely sliced .
1 lb tofu, for the drumsticks (optional) .
1 tsp mustard, of choice .
Basting mixture .
Stuffing .
2 tbsps toasted sesame oil .
1 tsp rosemary .
3 c Pepperidge Farm Herb Stuffing .
1/4-1/3 c soy sauce or tamari .
1 tsp winter savory or summer savory .
1/2 c toasted sesame oil .
1/4 c sage (may use 1/8)
Directions
Step #1 Mash tofu or mix well with hands.
Step #2 Be sure that all of the lumps are out.
Step #3 Line a 12 colander with wet cheesecloth over lapping the sides.
Step #4 Add the mashed tofu to the cloth covered colander, press down & cover with the overlapping sides.
Step #5 Place the whole thing In a large-ish bowl.
Step #6 Cover up the cheesecloth with a plate that fits inside the colander & place a 5 lb weight on the plate.
Step #7 Refrigerate & let sit for 2 to 3 hrs.
Step #8 When time is up, start the stuffing.
Step #9 Sauté the onions, celery & mushrooms in the 2 tbsps sesame oil.
Step #10 When soft, add the garlic & all the rest of the stuffing ingredients, except stuffing, mixing well.
Step #11 Stir & cook for 5 mins.
Step #12 Add herb stuffing & mix well.
Step #13 Remove tofu from fridge & take off weight, plate & top of cheesecloth.
Step #14 Hollow out tofu to within 1 inch of the sides & bottom, placing the tofu in a bowl.
Step #15 Place the stuffing inside the shell & pack in firmly.
Step #16 Cover up with the remaining tofu & pat down firmly.
Step #17 Turn stuffed tofu onto a greased baking sheet, flat side down.
Step #18 Gently press on sides of turkey to achieve a more oval shape.
Step #19 If desired at this point, you may mold drumsticks out of one lb of tofu, & place on each side of the turkey.
Step #20 Mix up the basting mixture & baste tofu turkey with half of it.
Step #21 Cover up the turkey with foil wrap, & bake this at 400F degrees for about 1 hr.
Step #22 Remove foil wrap, baste with all the remaining mixture except a few tbsps & return to oven for 1 hr more, or until the turkey is golden.
Step #23 Remove from oven & use rest of basting mix.
Step #24 Using at least 2 large spatulas, move to a large plate.
Step #25 Serve with the gravy of your choice, if you wish, & cranberry sauce.
