Vegan Lemon Mini-cakes Recipe

Ingredients
  • 1 tbsp pure maple syrup .
  • 1 lemon, zest of .
  • 2 tbsps warm water .
  • 1 tsp fresh lemon juice .
  • 2 tsps baking powder .
  • 1 1/2 tsps Ener-G Egg Substitute, mixed with .
  • 1/2 c turbinado sugar .
  • 1/4 c vegetable oil .
  • 1/3 tsp salt .
  • 1 1/2 c unbleached flour .
  • 1/2 c soy milk

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Combine first three ingredients In a large-ish bowl.
  • Step #3 Combine the remaining ingredients in a medium bowl.
  • Step #4 Add the wet ingredients to the large bowl & carefully stir (do not overmix!).
  • Step #5 Pour into lightly oiled mini-loaf tin (filling 6 mini-loaves) & bake for 25-30 mins.
