Ingredients
1 1/2 c all-purpose flour .
1/2 c butter, softened .
2 1/4 c red currants (or other fresh berries) .
1/2 c white sugar .
1 tsp baking powder .
2 egg whites .
For Filling .
1 1/2 tsps lemon zest, grated .
2 egg yolks .
2 tsps cornstarch .
1/2 c white sugar .
For Crust
Directions
Step #1 For Crust: In a medium bowl, sift together flour & baking powder.
Step #2 Mix in butter, sugar, egg yolks & lemon zest until mixture forms dough.
Step #3 Pat the dough evenly into the bottom of a 9" springform pan.
Step #4 Chill dough in pan for 25-30 mins.
Step #5 Preheat oven to 325F degrees F (165 degrees C).
Step #6 Bake in oven for 25 mins, or until golden.
Step #7 For Filling: In a medium bowl, beat egg whites until stiff.
Step #8 Gradually stir in the sugar & cornstarch; beat for 5 mins.
Step #9 Fold currants into mixture & pour this into warm crust.
Step #10 Bake in oven for 10 mins, or until top is lightly browned.
Step #11 Cool completely before serving.
