Red Currant Pie (or Is It Cake?) Recipe

Ingredients
  • 1 1/2 c all-purpose flour .
  • 1/2 c butter, softened .
  • 2 1/4 c red currants (or other fresh berries) .
  • 1/2 c white sugar .
  • 1 tsp baking powder .
  • 2 egg whites .
  • For Filling .
  • 1 1/2 tsps lemon zest, grated .
  • 2 egg yolks .
  • 2 tsps cornstarch .
  • 1/2 c white sugar .
  • For Crust

Directions
  • Step #1 For Crust: In a medium bowl, sift together flour & baking powder.
  • Step #2 Mix in butter, sugar, egg yolks & lemon zest until mixture forms dough.
  • Step #3 Pat the dough evenly into the bottom of a 9" springform pan.
  • Step #4 Chill dough in pan for 25-30 mins.
  • Step #5 Preheat oven to 325F degrees F (165 degrees C).
  • Step #6 Bake in oven for 25 mins, or until golden.
  • Step #7 For Filling: In a medium bowl, beat egg whites until stiff.
  • Step #8 Gradually stir in the sugar & cornstarch; beat for 5 mins.
  • Step #9 Fold currants into mixture & pour this into warm crust.
  • Step #10 Bake in oven for 10 mins, or until top is lightly browned.
  • Step #11 Cool completely before serving.
