Florentine Rolls Recipe

Ingredients
  • 4 green onions, finely sliced .
  • 1/4 c crumbled feta cheese .
  • 1/2 tsp salt .
  • 1/4 tsp fresh ground black pepper .
  • 2 garlic cloves, minced .
  • 1 tbsp butter, melted .
  • 2 tbsps toasted pine nuts .
  • 1/4 c fresh basil .
  • 2 tbsps olive oil, divided .
  • 1/4 c finely shredded parmesan cheese .
  • 1 (13 7/8 oz) package put in the fridged pizza dough (I have used both whole wheat dough & crescent rolls with great results!) .
  • 1 (6 oz) bag fresh baby spinach

Directions
  • Step #1 Preheat oven to 375.
  • Step #2 Grease 12 muffin c & set aside.
  • Step #3 In a large skillet, heat 1 tbsps oil & cook green onions & garlic until tender.
  • Step #4 Add spinach & basil; cook & stir over med-heat/flame until just wilted.
  • Step #5 Drain off excess liquid.
  • Step #6 Stir in salt & pepper; set aside to cool.
  • Step #7 On a well-floured surface, unroll pizza dough & shape into a 12x8 rectangle.
  • Step #8 Brush surface of dough with remaining olive oil.
  • Step #9 Spread spinach mixture to within one inch of the edges of the dough.
  • Step #10 Sprinkle top with feta & pine nuts.
  • Step #11 Starting with a long side, roll this into a spiral.
  • Step #12 Slice roll this into 12 pieces & place cut-side up in prepared muffin c.
  • Step #13 Brush with butter & sprinkle with parmesan cheese.
  • Step #14 Bake for 18-20 mins or until golden brown.
  • Step #15 Let stand in muffin c for 2 mins.
  • Step #16 Remove carefully & serve warm.
