Green Beans, Bacon And Potatoes Recipe

Ingredients
  • 1/2 lb green beans (about 2 Cups) .
  • 4 c water .
  • 4 small new potatoes, Scrubbed, Cut in 8 pieces .
  • 5 slices bacon, cut in 1-inch Pieces .
  • 1/4 c onions (Chopped) .
  • 1/4 tsp pepper .
  • 1 1/2 tsps salt

Directions
  • Step #1 In a medium saucepan, place water, beans, potatoes & 1 tsp of the salt.
  • Step #2 Over medium-high heat, bring to a boil.
  • Step #3 Reduce heat to low, cover & let simmer for 10 to 12 mins or until tender.
  • Step #4 Drain.
  • Step #5 Cover up & set aside.
  • Step #6 Meanwhile, in a 12 inch skillet over medium-high heat, cook bacon & onion until bacon is crisp & onion is tender.
  • Step #7 Drain off all but 1 tbsp of the bacon drippings.
  • Step #8 Add beans & potatoes & toss until well coated with bacon & onion.
  • Step #9 Sprinkle top with remaining 1/2 tsp salt & pepper & serve.
