Grilled Chicken Under A Brick Recipe

Ingredients
  • 1/4 tsp hot red pepper flakes .
  • 3 tbsps olive oil .
  • 1 tsp salt .
  • 1 tbsp sliced fresh rosemary .
  • 3 lbs chickens, flattened .
  • 1/2 tsp pepper

Directions
  • Step #1 You will also need: 2 bricks wrapped in aluminum foil wrap.
  • Step #2 To flatten chicken, stand chicken upright on your cutting board.
  • Step #3 Cut down on either side of the backbone & remove it.
  • Step #4 Cut off the first two parts of the chicken wing leaving only the top section.
  • Step #5 Press the two sides open & remove the breastbone but do not cut the chicken in half.
  • Step #6 Press the chicken as flat as possible.
  • Step #7 Place olive oil, salt, rosemary, pepper & red pepper flakes in a shallow dish & stir well.
  • Step #8 Place chicken in dish & coat well on both sides with marinade.
  • Step #9 Marinate 10 mins or up to overnight in the refrigerator.
  • Step #10 Place chicken flat, with skin side up, on a hot BBQ.
  • Step #11 Place a brick on each half of chicken to flatten.
  • Step #12 Cook 10 mins.
  • Step #13 Lift the bricks off carefully, turn chicken, replace bricks & cook another 10 mins.
  • Step #14 Repeat until chicken is cooked through- about 20-25 mins per side, turning once or twice.
  • Step #15 When chicken is almost done, cook a few mins per side without the bricks.
  • Step #16 Cook chicken on high or medium high the whole cooking time, but if it begins to burn, reduce heat.
