Chocolate Covered Cherries Recipe

Ingredients
  • 2 c sifted confectioners' sugar .
  • 3 tbsps butter, softened .
  • 3 tbsps corn syrup .
  • 60 maraschino cherries, with stems .
  • 1 lb semisweet chocolate, coating

Directions
  • Step #1 Drain cherries & set on paper towels to dry.
  • Step #2 In a medium bowl, mix butter & corn syrup until smooth.
  • Step #3 Stir in confectioners' sugar & knead to form a dough.
  • Step #4 Chill to stiffen if necessary.
  • Step #5 Wrap each cherry in about 1 tsp of dough.
  • Step #6 Chill until firm.
  • Step #7 Melt chocolate coating in a heavy saucepan over low heat/flame.
  • Step #8 Dip each cherry in by its stem, & place on waxed paper lined sheets.
  • Step #9 Chill until completely set.
  • Step #10 Store in an airtight container in a cool place.
  • Step #11 Best after 1 or 2 weeks.
