Rich Chicken Stock Recipe

Ingredients
  • 3 tbsps olive oil .
  • salt & freshly ground black pepper .
  • 3 large Spanish onions, quartered (skin left on) .
  • 6 sprigs fresh thyme .
  • 2 bay leaves .
  • 4 lbs chicken bones, sliced .
  • 2 large carrots, coarsely sliced .
  • 1 bunch fresh flat-leaf parsley, remove stems .
  • 1/2 head celery, coarsely sliced .
  • 1/4 c peppercorns

Directions
  • Step #1 Preheat oven to 450 degrees F.
  • Step #2 Combine chicken bones, celery, onions, & carrots In a large-ish roasting pan; toss with oil & season lightly with salt & pepper.
  • Step #3 Roast until the bones & vegetables are a rich golden brown, about 30 to 40 mins.
  • Step #4 Transfer the bones & vegetables to a large stockpot, add 12 c cold water, & the remaining ingredients & bring to a boil over high heat.
  • Step #5 Reduce the heat to medium & let simmer for 4 hrs, skimming the scum that rises to the top this with a ladle every 20 mins.
  • Step #6 Remove from the heat & strain through a mesh strainer into a clean pot.
  • Step #7 Place back on the stove over high heat & cook this until reduced by half.
  • Step #8 Use as soon as possible or let cool to about room temp, cover, & put in the fridge or freeze until ready to use.
