Red Snapper Le Chambord Recipe

Ingredients
  • 4 tbsps butter .
  • 2 tbsps butter .
  • 12 oz shrimp .
  • salt & pepper .
  • 1 garlic clove, minced .
  • 10 fresh mushrooms, sliced .
  • 1/2 lb shrimp, sliced .
  • 12 oz lump crabmeat .
  • 3 sprigs parsley, sliced fine .
  • 3 slices bread, soaked .
  • 4 lbs red snapper .
  • 1/2 pint white wine .
  • 3 green onions, minced .
  • 2 green onions, sliced fine

Directions
  • Step #1 Split fish & remove bone.
  • Step #2 Sauté about 30 mins the green onions,.
  • Step #3 garlic, crabmeat, parsley, shrimp & bread squeezed out in water.
  • Step #4 Stuff into red snapper, & bake 1 hr, season, basting often.
  • Step #5 Place on a platter, garnish with lemon & parsley.
  • Step #6 (For Sauce): Sauté green onions, mushrooms, add wine, & shrimp in butter, stir well, & season to taste.
  • Step #7 Pour some of this sauce over fish & serve the remainder in a gravy boat.
