Ingredients
  • 6 skinless boneless skinless chicken breasts .
  • 1/4 tsp sugar .
  • 1 tsp dried oregano .
  • vegetable oil cooking spray .
  • 2 tbsps parmesan cheese .
  • 8 oz linguine or spaghetti .
  • parmesan chicken .
  • 1/4 tsp salt .
  • 1 tsp olive oil .
  • 3 garlic cloves, minced .
  • 2 (14 oz) cans crushed tomatoes .
  • 1/2 tsp dried Italian seasoning .
  • 1/8 tsp pepper .
  • 1/4 tsp garlic powder .
  • 1 tbsp all-purpose flour .
  • 2 tbsps grated parmesan cheese .
  • tomato cream sauce .
  • 1 tsp dried basil .
  • 1/4 c 1% low-fat milk .
  • 1 c 1% low-fat milk .
  • 1/2 c fine dry breadcrumbs .
  • 1 tsp dried parsley .
  • 1 tbsp Dijon mustard

Directions
  • Step #1 For Tomato Cream sauce:.
  • Step #2 Heat oil in a non-stick saucepan over med-heat/flame until hot.
  • Step #3 Add garlic, saute until tender.
  • Step #4 (do not brown! it makes the garlic bitter).
  • Step #5 Add cans of tomato & next 5 ingredients.
  • Step #6 Bring mixture to a boil.
  • Step #7 Reduce heat & let simmer uncovered,20 mins stirring every once in awhile.
  • Step #8 Combine milk & flour in a small bowl, stirring well with a whisk.
  • Step #9 Gradually add milk mixture to tomato sauce, stirring constantly.
  • Step #10 Cook, stirring constantly for 5 mins until slightly thickened; stir in the cheese.
  • Step #11 Set lid on pot & keep warm on low.
  • Step #12 For Parmesan chicken:.
  • Step #13 Preheat oven to 350 degrees.
  • Step #14 Combine milk & mustard,stirring with a whisk.
  • Step #15 Combine breadcrumbs & next 4 ingredients in a bowl.
  • Step #16 Dip chicken in milk mixture, then dredge in breadcrumb mixture.
  • Step #17 Lightly mist a baking sheet with cooking spray & place chicken on it.
  • Step #18 Bake for 15 mins then flip chicken & bake for another 15 on other side.
  • Step #19 *With 10 mins left for chicken to be done start cooking pasta.
  • Step #20 Place 1 c pasta on each plate top this with chicken breast.
  • Step #21 Ladle some tomato cream sauce over pasta & chicken.
  • Step #22 Sprinkle top with a little extra Parmesan cheese.
  • Step #23 serve:).
