1/4 c whipping cream (or use 1/4 c 18% table cream) .
prepared salsa (any amount desired) .
2 green onions, finely sliced .
2-3 tbsps butter .
sour cream (any amount desired) .
1/2 tsp black pepper (or to taste) .
10 large eggs .
2 green onions, sliced .
3 c shredded old cheddar cheese (can use more or less) .
1 small jalapeno pepper (seeded & finely sliced, or to taste) .
1 tsp salt (or to taste) .
1 lb pork sausage (casings removed, can use more or less) .
4 oz cream cheese (cut into small cubes) .
6 (8 inch) flour tortillas
Directions
Step #1 Cook the sausage meat with green onions in a skillet until browned; drain fat & transfer to a bowl; set aside.
Step #2 In a bowl mix/whisk together the eggs with jalapeno pepper, whipping cream, salt & pepper.
Step #3 Melt the butter in the same skillet over med-heat/flame; add in the egg mixture; cook without stirring until the eggs begin to set on the bottom.
Step #4 When the eggs start to set sprinkle the cream cheese cubes over the egg mixture.
Step #5 Place a spatula across the bottom of the skillet to lift the eggs so that the uncooked will flow underneath; cook this until eggs are set but not overcooked.
Step #6 Divide & sprinkle about HALF of the shredded cheddar cheese onto each tortilla.
Step #7 Divide & top this with the egg mixture, then cooked sausage meat.
Step #8 Then sprinkle with the remaining half of the grated cheddar cheese.
Step #9 Fold tortillas over the filling.
Step #10 If desired you can place the tortillas on a baking sheet, cover loosley with foil wrap, then warm slightly in oven.
