3/4 c white potatoes, cooked & mashed to form 3/4 c unflavoured .
2 eggs, yolk & white separated .
1 1/4 c skim milk .
1 tsp cinnamon .
3 tbsps water .
1/3 tsp brown sugar (optional) .
1/4 tsp orange zest .
Fluffy Pancakes .
1 pinch cinnamon .
2 1/2 tbsps brown sugar .
1 1/3 c flour .
2 1/2 tsps baking powder .
1 1/2 tsps Splenda sugar substitute or sugar .
3 tbsps pancake syrup .
mashed potatoes .
1/2 tsp vanilla .
6 dried apricots, finely sliced .
Orange Maple Syrup
Directions
Step #1 For the MASHED POTATO: peel & dice two medium-small white potatoes.
Step #2 Place in a medium saucepan on high heat & add enough water to cover.
Step #3 Once potatoes are boiling reduce heat & let simmer for 15 mins or till potatoes are done.
Step #4 Mash potatoes with potato masher & enough milk to make them creamy.
Step #5 For the ORANGE MAPLE SYRUP: place sliced apricots, & pinch cinnamon in a small saucepan, orange zest, orange juice, heat on medium heat till boiling.
Step #6 Turn off heat, add Splenda, brown sugar, & water & let this stand for 15 mins so apricots can continue to soften.
Step #7 In a food processor/blender or mixer, mix apricot orange juice mixture till as smooth as you can get it.
Step #8 Stir in pancake syrup.
Step #9 Serve warm.
Step #10 For the PANCAKES: Separate two eggs, place the yolks In a large-ish bowl & the whites in a medium bowl.
Step #11 Beat the egg whites with a hand mixer until white, fluffy & stiff, set aside.
Step #12 Add ¾ c mashed potato to the egg yolks & whisk with a wire whisk till smooth.
Step #13 Add milk & vanilla, & whisk till smooth.
Step #14 Add flour, cinnamon, brown sugar & baking powder to the wet ingredients, stir until just mixed.
Step #15 Fold in beaten egg whites.
Step #16 On a greased or cooking sprayed griddle or pan, cook pancakes using ¼ c per pancake (batter will be quite thick); cook this until bubbles start to appear & flip.
