El Torito Chicken Tortilla Soup Recipe

Ingredients
  • 1 zucchini, sliced .
  • 1 bay leaf .
  • 1/8 tsp cumin .
  • fresh cilantro leaves .
  • 3 quarts chicken broth .
  • 1 tsp dried Mexican oregano .
  • 1 yellow squash, sliced .
  • 1 lime, juice of .
  • 2 tbsps sweet sherry (preferably Harvey's Bristol Cream) .
  • 1 tbsp fresh mint, sliced .
  • 8 slices avocados .
  • 1 red onion, sliced .
  • 1 tsp pickled jalapeno peppers, chile seeded sliced .
  • 2 carrots, sliced .
  • 1/2 tsp chipotle chiles in adobo, pureed .
  • oil .
  • 1/2 red bell pepper, sliced .
  • 1/4 c tomato paste .
  • 4 corn tortillas (cut into thin strips) .
  • 1/2 lb monterey jack cheese, shredded .
  • 2 boneless skinless chicken breasts .
  • 1 boiling potato, sliced .
  • white pepper, to taste .
  • 2 garlic cloves, sliced .
  • salt, to taste .
  • Garnishes .
  • 1 tbsp fresh cilantro, sliced

Directions
  • Step #1 Poach chicken breast in simmering chicken broth until done through, about 10 mins.
  • Step #2 Set aside until cool enough to handle & shred.
  • Step #3 Combine chicken broth, chipotle & jalapeno chilies, carrots, tomato paste, chicken, oregano, red onion, potato, bay leaf, garlic, cumin & salt & pepper in large saucepan.
  • Step #4 Bring to boil, reduce heat & let simmer 20 mins.
  • Step #5 Correct seasoning, if necessary.
  • Step #6 Add zucchini, squash, pepper, lime juice & Sherry.
  • Step #7 Bring again to boil.
  • Step #8 Reduce heat & let simmer 15 mins.
  • Step #9 Add cilantro & mint.
  • Step #10 Stir, then remove this from heat.
  • Step #11 To assemble, fry tortilla strips in hot oil until crisp.
  • Step #12 Drain on paper towels & set aside.
  • Step #13 Ladle soup into each bowl.
  • Step #14 Sprinkle top with shredded cheese & tortilla strips.
  • Step #15 Garnish each bowl with avocado slice & sprig cilantro.
  • Step #16 Serve at once.
