Fragrant Lamb With Spinach Recipe

Ingredients
  • 1 red chili, seeded & sliced .
  • 4 garlic cloves, crushed .
  • 1 tsp white pepper .
  • 4 tbsps sliced fresh coriander .
  • 1 sprig fresh coriander (to garnish) .
  • 1 tsp garam masala (see my recipie on this site) .
  • 1/2 tsp salt .
  • 200 g Greek yogurt .
  • seeds from 8 green cardamom pods, crushed .
  • 2 onions, finely sliced .
  • 1/2 tsp ground cinnamon .
  • 2 large tomatoes, skinned & sliced .
  • 2 tsps ground coriander .
  • 2 bay leaves .
  • 18 oz lean boneless lamb, cubed .
  • 2 tbsps sunflower oil (or ghee) .
  • 225 g fresh spinach .
  • 2 tsps ground cumin .
  • 2 tbsps fresh gingerroot, peeled & sliced

Directions
  • Step #1 Heat the oil In a large-ish saucepan or flameproof casserole.
  • Step #2 Add the onions, garlic & ginger,andfry for about 15 mins, stirring frequently, until the onions are golden.
  • Step #3 Stir in the chilli, paprika, crushed cardomom seeds,corianer,cinnamon, cumin, white pepper, bay leaves & salt.
  • Step #4 Stir briefly over a moderate heat.
  • Step #5 Add the yogurt & 150ml (5 fl oz) of water.
  • Step #6 Add the lamb, mix well & cover the pan.
  • Step #7 Simmer carefully for 1 1/4 hrs or until the lamb is tender.
  • Step #8 Add the tomatoes, spinach & sliced coriander.
  • Step #9 Cook for 2-3 mins, stirring until the tomatoes have softened slightly & the spinach has wilted.
  • Step #10 Taste for seasoning & remove the bay leaf.
  • Step #11 Serve garnished with fresh coriander.
