Mary's 2nd Day Cake Recipe

Ingredients
  • 1/3 c oil .
  • 1 1/3 c water .
  • 2 (6 oz) packages instant vanilla pudding .
  • 1 (20 oz) can crushed pineapple (drained) .
  • 1 (20 oz) carton Cool Whip .
  • 2 (8 oz) packages cream cheese .
  • 18 1/4 oz yellow cake mix .
  • 4 c milk .
  • 3 large eggs

Directions
  • Step #1 Blend dry cake mix, water, oil & eggs in large bowl at lowish speed until moistened; beat for 2 mins at medium speed.
  • Step #2 Put batter into 2 - 9 inch round - greased & floured pans.
  • Step #3 Bake at 350 degrees for 28-31 min Mix pudding, milk & cream cheese together until it is the same consistency as pudding.
  • Step #4 Once the cakes are done let them cool.
  • Step #5 Place one cake on a serving platter.
  • Step #6 Spread the crushed pineapple on the bottom cake.
  • Step #7 Place the next cake on top of the bottom cake & pineapple mixture.
  • Step #8 Place the pudding mixture on top of the cake & then frost the whole cake with the cool whip.
  • Step #9 ** This is more flavorful if made 1-2 days prior to serving & kept put in the fridged.
