Oven Roasted Earl Grey Tea, Lemon & Rosemary Brined Turkey Recipe

Ingredients
  • 6 fresh rosemary sprigs .
  • 1/4 c olive oil .
  • 6 1/2 quarts water .
  • 1 1/2 c light brown sugar, packed .
  • 1 (24-26 lb) whole turkey, neck, heart & gizzard removed .
  • 2 celery ribs .
  • 12 c ice .
  • 6 tbsps earl grey tea (18 tea bags) .
  • 2 c kosher salt .
  • 1 large onion, unpeeled & quartered .
  • 2 c low sodium chicken broth .
  • 3 whole lemons, punctured all over with a fork .
  • 3 lemons, juice & rind of

Directions
  • Step #1 Bring 6 1/2 quarts water to a boil.
  • Step #2 Remove from heat & add tea, lemon peel & rosemary.
  • Step #3 Cover up & let steep for 20 mins.
  • Step #4 If using tea bags, remove them.
  • Step #5 If using bulk tea, remove lemon peel & rosemary, set aside & strain the mixture & discard the tea leaves.
  • Step #6 Pour the mixture back in the pot & stir in the salt, sugar & the set-aside lemon peel & rosemary.
  • Step #7 Stir until salt & sugar are dissolved.
  • Step #8 Stir in the ice, cool to below 50 degrees F.
  • Step #9 Line a large pot with two 30-gallon plastic garbage bags, one inside the other.
  • Step #10 Place turkey in the bag-lined pot, breast-side down.
  • Step #11 Pour brine over turkey; press to submerge.
  • Step #12 Twist off bags to eliminate air pockets & tie.
  • Step #13 Refrigerate turkey in brine for 2 days (48 hrs).
  • Step #14 Drain turkey, discard brine.
  • Step #15 Pat turkey dry.
  • Step #16 Stuff cavity with rosemary, punctured lemons, celery & onion.
  • Step #17 Fold wing tips under; tie legs.
  • Step #18 Rub olive oil all over the turkey.
  • Step #19 Place oven rack in the lowest third of the oven & preheat to 350 degrees F.
  • Step #20 Place turkey on a rack in large roasting pan.
  • Step #21 Place bird in oven & roast for 2 hrs, then baste with 1/2 c broth.
  • Step #22 Continue to roast until turkey is brown & thermometer inserted into the thickest part of the thigh registers 165 degrees F.
  • Step #23 Basting frequently with the remaining 1 1/2 c broth & pan juices.
  • Step #24 Cover up loosely with foil wrap if browning too quickly.
  • Step #25 Transfer turkey to a large platter or carving board.
  • Step #26 Tent loosely with foil wrap.
  • Step #27 Let stand at least 30 mins or up to 45 mins prior to carving.
