Eggplant Parmesan Pizza Or The Yummiest Pizza Ever! Recipe

Ingredients
  • 1 c mozzarella cheese .
  • 1 eggplant .
  • 1/2 c vegetable oil .
  • tomato sauce (your favorite) .
  • flour .
  • 1/4 c parmesan cheese .
  • salt .
  • 2 prepared pizza crust (or recipe for pizza dough)

Directions
  • Step #1 Peal Eggplant & cut into 1 inch round circles.
  • Step #2 Lay single file on baking sheet & lightly salt to coat eggplant.
  • Step #3 Place 2nd baking sheet on top of eggplants & weight down top this with a couple cans of whatever you have in the cboard.
  • Step #4 Let sit for about 2 hrs, at this point liquid will have gathered at the bottom of the sheets (this is the bitter).
  • Step #5 Once the 2 hrs have past rinse off the eggplant & pat dry.
  • Step #6 If you are making pizza dough you can start the eggplants at the same time, that way they will both be ready for the next stage together.
  • Step #7 Prepare 1-2 pizza shells, cover with your favorite tomato sauce.
  • Step #8 Take your rinsed & dried eggplant & coat in flour, heat a small sauce pan & add the 1/2 c of oil.
  • Step #9 Once hot begin deep frying the eggplant slices until golden brown, place on paper towel to get rid of excess oil.
  • Step #10 once your eggplants are finished your ready to finish the pizza.
  • Step #11 Layer with eggplants, mozzarella & Parmesan.
  • Step #12 Or leave out cheese for a Vegan version.
  • Step #13 Bake in a 375° oven until pizza shell & cheese is golden brown.
