2 c instant mashed potatoes (see note in prep area) .
1/2 c sliced onions .
1 (15 1/2 oz) can sloppy joe sandwich sauce .
1/2 c sliced green bell peppers (optional) .
2 c water .
1/4 tsp garlic powder or 1/2 tsp pre minced garlic .
1/4 c sour cream .
1 egg, beaten .
2 oz shredded cheddar cheese .
1 1/2 c green giant niblets frozen corn .
1 lb lean ground beef
Directions
Step #1 Heat oven to 325°F
In large skillet, brown ground beef, onion & bell pepper over medium-high heat until beef is thoroughly cooked, stirring frequently.
Step #2 Drain.
Step #3 Add sandwich sauce & corn; mix well.
Step #4 Reduce heat; simmer 4 to 6 mins or until thoroughly heated & corn is crisp-tender, stirring every once in awhile.
Step #5 Meanwhile***, in medium saucepan, bring water & garlic salt to a boil.
Step #6 Remove saucepan from heat; stir in the potato flakes until well mixed.
Step #7 ***NOTE:.
Step #8 You could use leftover mashed potatoes here.
Step #9 Add sour cream & egg; mix well.
Step #10 Spoon beef mixture into ungreased shallow 2-quart casserole.
Step #11 Spoon potato mixture in circle around edges of casserole.
Step #12 Sprinkle top potatoes with cheese.
Step #13 Bake for 25 to 30 mins or until potatoes are set.
Step #14 If desired, sprinkle potatoes with sliced fresh parsley.
