Vegan Artichoke Pie Recipe

Ingredients
  • 1 prepared vegan pie crusts (Whole Foods offers a good selection) .
  • 2 garlic cloves, minced .
  • 1 dash Tabasco sauce (or your preferred hot sauce) .
  • 1/4 c grated vegan parmesan cheese (available at Whole Foods) .
  • 2 tbsps minced fresh parsley (or 1 tbsp dried parsley) .
  • salt & freshly ground black pepper, to taste .
  • 1/2 c sliced onions .
  • 3 1/2 eggs, replacements (such as Ener-G) .
  • 1 (9 oz) can artichoke hearts, coarsely sliced .
  • 1/4 c soy milk .
  • 3 tbsps olive oil .
  • 1 tsp dried basil

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Bake pie crust for 10 to 15 mins, until just barely cooked.
  • Step #3 Heat 2 tbsps of the olive oil in a skillet.
  • Step #4 Add onion & sautee over med-heat/flame until translucent.
  • Step #5 Add garlic & continue to sautee until onion is golden.
  • Step #6 In a bowl, mix egg replacements, onion mixture & all remaining ingredients EXCEPT remaining olive oil.
  • Step #7 Fill pre-baked crust with mixture.
  • Step #8 Sprinkle top with a bit more soy cheese & drizzle remaining olive oil over top.
  • Step #9 Bake for 25-30 mins or until pie is set & golden on top.
  • Step #10 Let cooked pie rest a few mins before cutting to serve.
