Cream Of Chicken Tortilla Soup Recipe

Ingredients
  • 1 large onion, sliced .
  • 6 boneless skinless chicken breast halves, cooked & shredded .
  • 2 tbsps ground cumin (to taste) .
  • 1 1/2 c salsa .
  • 1 (15 oz) can whole kernel corn .
  • 1 (1 1/2 oz) package fajita seasoning mix .
  • 1/2 c sliced jalapenos .
  • 4 garlic cloves, minced .
  • sliced fresh cilantro (to garnish) .
  • 1 (15 oz) can creamed corn .
  • tortilla chips .
  • 1 (10 3/4 oz) can cream of chicken soup .
  • 4 c half-and-half .
  • 4 c chicken broth .
  • monterey jack cheese, grated .
  • 3 tbsps butter .
  • 2 tbsps new mexico chile powder (to taste)

Directions
  • Step #1 In a large pot over med.
  • Step #2 heat, saute garlic & onions in butter.
  • Step #3 Add broth, cream of chicken soup, & half & half.
  • Step #4 Mix until well mixd.
  • Step #5 Add salsa, chili powder, cumin, chicken, corn, & jalapenos.
  • Step #6 Simmer soup for 1/2 to 1 hr, stirring often.
  • Step #7 Crumble tortilla chips into individual bowls, & ladle in the soup.
  • Step #8 Top with cilantro, cheese, & more tortillas if desired.
