Spanish Barley-brown Rice Pilaf Recipe

Ingredients
  • 1 green bell pepper (sliced) .
  • 1 c brown rice (raw) .
  • 1 tsp ground cumin .
  • 1/2 tsp oregano leaves .
  • 4 green onions (sliced) .
  • 1/2 c celery (sliced) .
  • 1 yellow bell pepper (sliced) .
  • 4 garlic cloves .
  • 1 white onion (sliced) .
  • 1 red bell pepper (sliced) .
  • 5 c water .
  • 1 orange bell pepper (sliced) .
  • 1/2 tsp cinnamon .
  • 17 oz petite sliced tomatoes .
  • 1/4 c Spanish olive oil .
  • 3 large knorr chicken bouillon cubes .
  • 1 1/2 c pearl barley (raw)

Directions
  • Step #1 Heat oil until hot In a large-ish Dutch oven.
  • Step #2 Turn heat down to medium.
  • Step #3 Add onions, all the peppers, & celery & saute until soft.
  • Step #4 Add garlic & saute for 3 mins more.
  • Step #5 Add barley & brown rice & saute for 5-10 mins or until the grains smell fragrant.
  • Step #6 Add remaining ingredients & bring to a boil.
  • Step #7 Turn down the heat & let simmer for approximately 45 mins, stirring once in awhile.
