3 white potatoes, peeled & cut into 2 inch cubes .
1 large white onion, finely sliced .
fresh ground black pepper .
4 carrots, peeled & finely grated .
salt .
1 tbsp olive oil
Directions
Step #1 Preheat the oven to 350°F
In a large skillet, brown the ground beef in the olive oil.
Step #2 While you are busy with the ground beef, cook the lentils in water over high heat until soft, about 15 mins.
Step #3 Test to make sure they are soft, there's not much worse then biting into a hard lentil while eating comfort food.
Step #4 While you are doing this you might as well jump ahead a bit in the ingredient list & cook up the potatoes in a separate pot of water until they are soft (do the fork test).
Step #5 In a large bowl, mix the browned ground beef with the cooked lentils.
Step #6 Add the tomatoes, carrots & white onion.
Step #7 Add the beaten eggs to the mixture.
Step #8 Add the jalapeno pepper.
Step #9 You can add as much or as little as you like, depending on how much zing you want in your pie.
Step #10 Add in the soy sauce, salt & pepper & paprika to taste.
Step #11 Mix everything until it's well mixd.
Step #12 Grease a 9x13 inch baking dish & pat the meat mixture down into the dish.
Step #13 Take the cooked potatoes & mash them together with the margarine, egg, salt & pepper.
Step #14 Do this quickly so the hot potatoes don't cook the egg before it has a chance to be incorporated.
Step #15 Spread the mashed potatoes over the meat mixture.
Step #16 Use your fork & make a pretty design in the mashed potatoes, & dust with sweet paprika.
Step #17 Place the pie in the oven & bake for about 50 mins.
Step #18 The top should be a lovely brown & crispy color (can color be crispy?).
Step #19 This is almost a complete meal, you really just need a green vegetable or salad on the side.
