Blueberry Walnut Wild Rice Salad Recipe

Ingredients
  • 2 tsps fresh thyme leaves .
  • 1 head butter lettuce .
  • 1 tbsp flat leaf parsley, sliced .
  • 6 oz chicken breasts, cooked & cubed .
  • 1 orange, peeled & segmented .
  • 1 tbsp walnut oil (optional) .
  • 3/4 c walnuts, coarsely sliced .
  • TO SERVE .
  • Dressing .
  • 1 c orange juice, freshly squeezed .
  • 1/4 tsp sugar .
  • 2 tbsps white wine vinegar .
  • 1/8 tsp salt .
  • 2 c fresh blueberries .
  • 1 tsp fresh tarragon, sliced .
  • 1/8 tsp black pepper .
  • 1 1/2 c wild rice, cooked & cooled

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Place walnuts on a baking sheet & bake 5-7 mins, until lightly toasted.
  • Step #3 Set aside to cool.
  • Step #4 Wash & drain blueberries, remove stems & place this In a large-ish bowl.
  • Step #5 Add sugar, salt, pepper & tarragon.
  • Step #6 Toss to coat.
  • Step #7 Let stand about 15 mintues.
  • Step #8 Add rice, chicken & walnuts.
  • Step #9 In a small bowl mix dressing ingredients.
  • Step #10 Pour over blueberry mixture & mix well.
  • Step #11 Place lettuce & orange segments on four plates.
  • Step #12 Top each with salad mixture.
  • Step #13 Serve at about room temp.
